symfony - How to create a local env file in shopware 6?

Question

I have defined some variables in my .env file. Problem is when I start the docker

./psh.phar docker:start

every time those variables I have defined are removed.

I have tried creating a .env.local file but this file not taking into account in Shopware.

Is there any way to store such variables in Shopware ?
